Oatmeal Chocolate Chip Cookies

Thick, chewy, balanced, and absolutely delicious cookies that you'll be going back to again and again and again!






Ingredients

1 ½ sticks (12 tbsp) unsalted butter

¾ cup (130g) light brown sugar

¼ cup (50g) granulated sugar

1 ½ tsp vanilla extract

1 cup (100g) old fashioned rolled oats

1 ½ cup (200g) all purpose flour

¾ tsp baking soda

¾ tsp salt

1 whole egg + 1 yolk

¼ cup (50g) semi sweet chocolate chips

½ cup (75g) dark chocolate chips


Instructions

Brown the Sugar

  1. Add the butter to a small pan on low to medium-low heat. Let it melt completely, start bubbling, then foaming (~5-7min). Once the color resembles caramel and you can see the brown specs at the bottom of the pan, transfer the butter to a ramekin to cool for 5-10mins.


Make the Dough

  1. In a medium bowl, whisk the sugars and butter together well until fully incorporated.

  2. Add in the egg, egg yolk, and vanilla to the bowl and whisk again

  3. Add dry ingredients (flour, baking soda and salt) and fold in until you don’t see any more streaks of flour

  4. Pour in oats and chocolate chips, and mix together. 


Chill the Dough

  1. Chill the dough in the fridge for at least 1 hour (or longer if you can resist!) This will limit the spreading and create a chewier, thicker cookie. 


Bake the Cookies

  1. Take out the dough while you preheat the oven to 350F

  2. Once the dough is soft enough, use an ice cream scooper or a spoon to form equal sized balls.

  3. Place on a baking sheet and bake for 12-13min.

  4. When freshly out of the oven, sprinkle a pinch of flaky sea salt on top of each cookie
