Date & Coconut Banana Bread

Putting a little twist on a weeknight favorite and making it even tastier! Here's how to put those over ripe bananas to good use.
Ingredients
1 cup (130g) pitted dates
1 stick (113g) unsalted butter
2 ripe bananas (260g)
2 room temperature eggs
2.5 tbsp (60g) sour cream or greek yogurt, room temperature
½ cup (90g) light brown sugar
1 tsp vanilla extract
1 ½ cup (200g) all purpose flour
1 tsp baking soda
1 tsp baking powder
¾ tsp salt
½ cup unsweetened coconut flakes
½ cup (75g) dark chocolate chips
Optional: toasted coconut flakes for topping
Instructions
Prep
Preheat the oven to 350F
Grease a loaf tin with butter or spray, and line with parchment paper
Soak the dates
Place the dates into a heat-proof bowl and cover with boiling water for ~10min (or until you can tell they are softened)
Melt the Butter
Add the butter in a microwave-safe bowl and microwave in 30s increments (careful to not over heat)
Remove from microwave and allow to cool to room temperature
Wet Ingredients
Peel bananas and mash in a large bowl until only small chunks are left
Drain the dates, keeping a little bit of the water it was sitting in. Add into a blender and pulse until smooth. Add more water while blending if needed
Add the date puree into the banana bowl and mix together until combined
Add eggs, sugar, vanilla, sour cream (or greek yogurt), and cooled butter to the same bowl. Mix until it is all well combined.
Dry Ingredients
In a separate medium bowl, combine all dry ingredients: flour, baking soda, baking powder, and salt. Whisk all together.
Make the Batter
Add the dry ingredients into the banana mixture bowl. Fold in slowly to incorporate wet and dry.
When you can still see some streaks of flower, add in shredded coconut flakes and chocolate chips. Mix in until all combined.
Pour batter into prepared tin
Optional: top the batter with toasted & sweetened coconut flakes for an added crunch & flavor!
Bake the Cake
Bake for 50min, or until you can insert a toothpick in the center and it comes out clean.
Allow for cake to cool before cutting in
