Recipe
Prep
Preheat oven to 350F.
Line loaf pan with parchment paper and grease the sides.
Cook Down Apples
Peel, core, and cut the apples into small cubes.
To your pan, add apples, butter, maple syrup, sugar, and spices and cook on medium heat.
Stir and allow the apples to be cooked down until there is little to no moisture left on the bottom of the pan (around 7 minutes).
Make Streusel
In a small bowl, add all the ingredients and use a fork or your fingertips to incorporate together until it resembles clumpy wet sand.
Wet Ingredients
Cream the softened butter and sugar in a medium bowl with a stand mixer or electric hand mixer until it becomes fluffy and pale in color.
Whisk in one egg at a time, making sure it's well mixed before adding in the second egg.
Add vanilla and mix again.
In a small separate bowl, combine yogurt and milk. Stir until well combined. To your egg and sugar bowl, add the yogurt mixture and combine (it may look a little curdled).
Dry Ingredients
In a separate bowl, add in all your dry ingredients (flour, baking soda, baking powder, salt, and cinnamon).
Whisk together so that it is all incorporated.
Finally, pour in your dry ingredients to your wet and carefully mix just until there are no more pockets of flour.
Assemble Cake
Into your loaf pan, spread half the batter evenly. Add half the apples on top of the batter, and top with 1/3 of your streusel mixture.
Repeat with the remainder of your ingredients, in the same order.
Bake
Bake for 45-50 minutes (check it's ready by inserting a toothpick into center and making sure it comes out clean).
Allow cake to cool in the pan for 20 minutes before pulling out.
Drizzle with powdered sugar glaze (all you need to do is mix the glaze ingredients together in a bowl!).
Enjoy!
